The process begins with the harvesting of the sugar cane, followed by a careful extraction of the juice, which is naturally fermented with yeasts that transform the sugars into alcohol. This fermented must is then distilled using traditional methods that concentrate the alcohol and refine its flavor profile, resulting in a clear and potent aguardiente.
